Nyt on aika tehdä simaa! Chez Jasun blogissa oli niin kivat simajutut, että sain potkua laittaa kuplajuoman riittävän ajoissa valmistumaan. Pakastimen tyhjennysoperaatio on edelleen käynnissä ja niinpä simaan päätyivät loput viime kesän raparperit. Valutetuista raparpereista keitin vielä kiisselin ja kopsautin toiseksi viimeisen mansikkarasian sisällön kuuman valmiin kiisselin joukkoon. Se jäähdytti kiisselin nopeasti ja päästiin melkein heti lusikoimaan sitä. Kesästä haaveilu alkoi saman tien.
Raparperisima
1 kg raparperia paloiteltuna
pala inkivääriä tai vaniljatanko
4 l vettä
3 dl sokeria
3 dl fariinisokeria
nippu sitruunamelissaa
1/5 tl hiivaa (1 ml)
Pulloihin
sokeria
rusinoita
Kiehauta puolet vedestä, lisää rapaperipalat, viipaloitu inkivääri tai halkaistu vaniljatanko. Anna kiehua noin 20 minuuttia.
Mittaa sokerit isoon astiaan. Kaada raparperimehu siivilän läpi sokereiden päälle. Sekoita, kunnes sokerit ovat sulaneet.
Lisää loppu vesi ja sitruunamelissan oksia.
Sekoita hiiva tilkkaan kylmää vettä ja lisää se kädenlämpöiseksi jäähtyneeseen juomaan.
Peitä astia kannella ja anna siman käydä huoneenlämmössä noin vuorokauden ajan.
Siivilöi sima toiseen astiaan ja pullota. Lisää jokaiseen pulloon noin teelusikallinen sokeria ja muutama rusina. Sulje pullot tiiviisti ja siirrä jääkaappiin. Sima on valmista, kun rusinat nousevat pintaan. Siihen kuluu aikaa muutamasta päivästä viikkoon.
